OF VEGETABLES
Green Beans, Carrots, and Pearl Onions
- 2 cups String Beans, 2-3 inches long and
steamed
- 1 cup Pearl Onions, peeled
- 3 Carrots, cut on a bias; steamed
- 1-tablespoon olive oil
- 3 tablespoons of butter
- Lemon juice
- Salt to taste
- Pepper to taste
METHOD
Add olive oil, and butter to hot sauté pan. Sauté onions,
carrots, and string beans in butter and allow onions to sweat.
Cook for approximately 5 to 10 minutes. Upon completion, sprinkle
with lemon juice and salt and pepper
Serves 4-6
