This is a huge recipe, so if you don't have a wok, use the biggest frying pan or pot you have. This recipe can easily be halved. I think it's special because it's so easy to make, and if unexpected company drops by, you can whip it up in no time and it can be a side dish or the main meal. If you don't have tamari, just use soy sauce.

Serves 6

  • 1 tablespoon vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 cup sliced sweet onion
  • 1/2 head bok choy, chopped
  • 2 large eggs, beaten
  • 1/2 pound tofu
  • 2 whole green onions, chopped
  • 1/4 cup tamari sauce
  • 1/4 cup dry sherry
  • 1/4 cup vegetable stock
  • 3 cups cooked long grain rice
  • 3/4 cups raw asparagus cut into 1/2 inch pieces

In a wok, heat the oil and stir-fry the garlic, ginger, and onion slices until the onion slices are transparent. Add the remaining ingredients and sauté until the eggs are cooked and all the vegetables are heated thoroughly, including the rice.
